I just ate this.

I’m not quite sure why… but after watching Rachel Ray cook it, somehow I thought it seemed like a good idea. At least it was a better idea then the shirt she was wearing. Rachel, honey, please button your shirt. My son is watching! Jeremiah actually said, “Mom she’s showing her private parts!” Yes, son… she is. Jer thought maybe her shirt just didn’t have buttons. I think that’s no excuse to cook Mac and Cheese Dog Casserole partially nude.

Notice also that the recipe requires beer. Which means that not only has Rachel shown way too much of her self to my son, but she has convinced him that we need to go buy a beer. Which might be fine in your house. But in my house we don’t buy beer. Nothing against cooking with it, I guess… but I’m not buying it…

Anyway, the casserole sans-beer is surprisingly good… and since I’m the only Maxwell to agree, I ate three large servings.
—
I got a lot of great stuff in the mail today. Holly sent me some inspirational/patriotic art and a Beth Moore book. I was really surprised. The card was great too. Despite everything I said about birthday cards… this one rocked.

I also received my Amazon order today. Thank you very much blog-friend who sent a gift certificate. I spent it on completely unnecessary coffee paraphernalia. Including a milk frother… Which is great for coffee and chocolate milk and … cold Postum.

Yes, I did it. I drank cold frothy Postum. Twice. Debbie, mock me if you must… but it is good. Really good. OK, not REALLY good… but good like Mac and Cheese Dog Casserole. Meaning… you’d be pleasantly surprised. Of course anything probably tastes good with an inch of frothy goodness on top. I’m going to make another glass as soon as I hit publish.
–
Since this is a random post I’ll include this random image. Just because I can. Besides… it looks a little frothy on top.

You all know of my love for coffee… but how many are aware of my longtime buffalo wing obsession?

As I searched for the perfect cup of joe, I began to roast my own coffee beans at home. It’s cheaper and much better in the long run.

Here we go again.

Now that we have a small eating out budget, I can’t get my weekly wing fix. So I’ve started cooking the wings at home. I think I have the frying process perfected. [I had that fryer for 11 years before deciding to actually use it. Thanks to who ever gave me that wedding present.] I tried Ott’s Wing sauce for lunch. Yeh. Wow. That was hotter than I expected. I called my dad to say goodbye. Because the wings were going to kill me. Of course I ate them all anyway.

Tonight I’m going to make a batch with Buffalo Wild Wings Parmesan Garlic sauce. Oh yeh! But that sauce is pricey. So I’m going to have to start making my own sauce. Do you have any favorite recipes?

This morning began late. I awoke at the sound of knocking, hearing an unfamiliar voice say, “housekeeping.” Drat. It’s 9am. The breakfast bar closes at 9 at our old hall. It probably does here too. Determined not to make the same mistake again, I walked around the building looking for the breakfast bar and a sign telling the serving times. I couldn’t find any signs or even a place that looked big enough to serve breakfast.

[Later I found out that they don't serve breakfast here. I almost cried. We can't afford to lose that free meal or the free milk. Then I remembered Mat 6:25. No worries. Joel says we can just get up early and drive to a different hall that does serve breakfast.]

I came back to the room and started to plan… We haven’t bought any cooking or eating utensils yet and we’re running low on groceries. [We didn't want to stock up before finding out how big the fridge is.]

People, I need breakfast. I need eggs for breakfast more than coffee. It’s that big of a deal. If you think I’m obsessive about a good cup of joe… you’ve never seen me with a breakfast burrito. This is art.

Step One: Gather supplies.
* small Gladware dish.
* cutting board
* fancy police officer switch blade knife
* scissors
* plastic cups provided by housekeeper

Step Two: Dig through fridge.
* onion
* egg
* margarine [no real clarified butter... sigh]
* tortilla
* salsa

Step Three: Hope the eggs don’t turn green.
*Dice onion with over priced switch blade. Cut plastic cup and create a ’spoon’. Put spoon of butter and onions in Gladware dish. Microwave for around 45 seconds.

*Break egg into Gladware and stir with plastic-cup-spoon. Microwave for 1 minute.

*Top eggs with salsa and wrap in tortilla. Use cutting board as plate.

*Try not to notice that there is no sausage, beans, cheese etc.

Thank God we get paid today. I don’t want to experience life without cheese.
